False Acacia ‘Honey’

The streets of Romania are scattered with fragrant Acacia trees and locals love to use their petals in teas, to flavour honey, and in their own preserves. Their flowers are said to have several medicinal properties.
 
The flavour itself is sweet and honey-like, a little floral and a little fruity. Viscous and possibly
our best subsitute for honey.
This preserve is so light and delicate but is just as perfect on toast, in teas, as a glaze.
 
Ingredients: Sugar, False Acasia Flowers & Lemon Juice.
